This cake was meant to be smashed! For a 1 year old named Bostynn (so cute!), it is a 6" round double layer white cake (the cake was actually pink and white marble) topped with yummy Vanilla Buttercream. I went for the non-typical pink and white ladybug instead of red and black :)

These darling cupcakes are delicious Cinnamon Sugar cake topped with a Creamy Vanilla Buttercream.

Way to go Bear River!

This cake was HUGE. It was for my nephew's football team who just ended the season a few weeks ago. Half was chocolate cake, filled with chocolate cream chocolate chip filling and the other half was vanilla with a berry cream filling. The whole cake was frosted with vanilla buttercream. I also made fondant football helmets for each boy with their number on it and a cake football dipped in chocolate for the coaches. This was fun to make!

Oh how sweet it is...

My younger sister's birthday is tomorrow and she will be in class at college all day, so she asked if I would make her some treats to share with her classmates. There are mini chocolate cupcakes filled with whipping cream and topped with peanut butter buttercream, marbled carmel chocolate bars, and (my first attempt at) chocolate and cream cheese whoopie pies. I made sure to sample them first, before I delivered her the box. Wouldn't want all those college kids getting sick :)

Best Brownies EVER

Normally, I am not a big fan of chocolate. So, when my best friend requested brownies for her birthday instead of cake (I know, she's crazy) I looked high and low for a good recipe. I found this recipe from allrecipes.com and they were soooo good, I even ate several of them. I topped them with Chocolate Cream Cheese buttercream - do we see a trend here??

Brownie Recipe:
8 oz. semi-sweet chocolate
1 cup butter
Melt in pan on low, set aside.

5 eggs
3 cups sugar
1 TB vanilla
Mix (hopefully you have a stand mixer) on high for 10 minutes. Very important, don't cheat on the time.

While egg mixture is mixing, sift together 1-1/2 cups of flour and 1 tsp of salt. Set aside. After the ten minutes is up, add the chocolate mixture and flour mixtures one at a time and mix until just incorporated. Pour into the pan of your choice (I used a square 10"x2" pan) and bake on 350 degrees for 35-40 minutes. Now - enjoy!

Happy Birthday!

So I did a terrible thing recently - I turned 30! Ok, ok, not so terrible. It was actually very fun and I made myself my most favorite cake - Angel Food with Raspberry Cream Cheese Buttercream (I know!) and topped in wispy whipping cream. It was divine to say the least!
